What is a Chitlin'? The following is an excerpt from Helen Naismith's Famous Festival Foods: "The first question the curious ask upon arrival in Salley, South Carolina for the annual Chitlin' Strut, is 'What is a chitlin?' The answer may not sound too appetizing but once eaten, you cannot deny that something special has just been realized. Chitlin's, a contraction of the word "chitterlings" are pig intestines, and the people of Salley fry them by the ton during the celebration which is held on Saturday following Thanksgiving. The South is famous for its ability to take what most would consider non-useable portions of the animal and turn them into regional delicacies. Pig's feet, hog jowls, ham hocks, cracklin's, and chitlin's are all part of Southern tradition and the folks of Salley invite you to taste the rich heritage. During the Strut there are, of course, parades, a queen contest, country music, and food. In addition to the chitlin's found in abundance everywhere, there's also plenty of barbecued pork and chicken. Once in Salley for the festival, you smile a lot and eat often. But don't despair if you find chitlin's not to your liking - just relax in this friendly little town in the rolling hills of South Carolina, and take solace in remembering what someone else once said: I am not a Chitlin' eater;
